Happy New Year!

We hope that you were able to ring in a happy and healthy new year.

2017 is the year of the rooster, written as 酉(tori)in Japanese. The character was originally a hieroglyph for a wine barrel and can be found in all kinds of words related to alcohol such as sake, brewing, and fermentation. When speaking figuratively about the twelve animals of the Chinese Zodiac, the rooster is sometimes likened to ripe fruit at the limit of maturity.

Since long ago, alcohol made through the fermentation of grains and fruits has been fundamental to the creation of a bountiful food culture. And people from ancient times prayed for the coming year to shine as brightly as the shimmer of the moon reflected in their sake cups.

This year, we will strive to present to you delicious Japanese dishes across the four seasons, never forgetting to show our appreciation for the blessings of nature that make it all possible.

Zouni

HIGASHI-YAMA Tokyo’s unique Zouni has become an annual favorite among our guests. A lotus root–starch dumpling filled with chicken is topped with a thin layer of mochi pounded rice and then steamed. Served with thickened bonito broth and tasty greens, this delightful dish is perfect for a New Year celebration.

Simmered yellowtail with turnip sauce

Succulent and fleshy yellowtail simmered in a sauce of sweet and salty flavors with pureed turnip sauce. This elegant dish allows you to enjoy the deep umami of each ingredient.

New Year Celebratory Sake

To ring in the New Year with prayers for health and happiness, we will be breaking open a sake cask to share a celebratory drink with you all. Starting on January 10th, masuzake will be served from the cask in small wooden boxes, but we have just one cask, so please join us sooner rather than later to partake in this tasty tradition.
