Japanese cuisine is rich in a variety of ingredients from the sea and mountains. Local dishes strongly reflect the history of the area. Based on its unique climate and natural features, each local cuisine is like a treasure box filled with the knowledge and wisdom of our ancestors.
At each event in the series, FOOD NIPPON will focus on one prefecture or region and introduce its unique ingredients, sake and tableware in our special course menu. FOOD NIPPON aims to help diners in Tokyo rediscover Japanese food culture.
The area featured in the third event this September is Morioka-shi in Iwate Prefecture. The northern part of Iwate Prefecture, including Morioka-shi, is famous for its diverse "grain culture." This area boasts the greatest varieties of foods derived from grains such as soba and cold noodles, hittsumi-dumplings, and shitogi-rice cakes. We will serve these unique local delicacies in the HIGASHI-YAMA Tokyo style.
We hope you will enjoy the elegant simplicity of the foods from the Tohoku region in northeastern Japan, where harsh natural conditions have imbued the ingredients with true flavor. We are looking forward to your visit.
